Who said Halloween’s just for the kids? This year, we’ve created a party friendly and CBD-infused take on a Halloween classic: chocolate cupcakes! This recipe will have you making cupcakes that are rich, moist and full of flavour – all topped with a creamy, vegan-chocolate ganache frosting.
Yep, these spooky cupcakes are a perfect way to get in on the Halloween fun! We’ve also infused our recipe with our Organic CBD Oil. Meaning: have a few bites, and relax as our chocolate CBD cupcakes put you at ease while the kids party away their sugar rush. You’ll thank us later! 🎃😂
Serves 8 | Vegan
Chocolate Ganache – Topping
- 2 cups chopped semisweet chocolate (10 ounces)
- 1 & 2/3 cups full-fat coconut milk (from one 13.5-ounce can)
- Candy sprinkles or any toppings of your choice
Chocolate Cupcakes – Base
- 1 & 1/3 (120g) Cups Flour
- 1/3 (70g) Cup Cane Sugar
- 1 Tbsp Maple Syrup
- 1/2 (50g) Cup Unsweetened Cocoa Powder
- 1 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 1/4 Sea Salt
- 2 Dairy Free Dark Chocolate bars
- 3/4 (180 ml) Cup of Plant-Based Milk (Almond, Soy, Oat, etc.)
- 2/3 (160g) Cup of Applesauce
- 1/4 (65g) Nut Butter
- 1 Tbsp Apple Cider Vinegar
- 1 Tsp Vanilla Extract
- 2 Tbsp of CBD Oil (Isolate or Full-Spectrum)
It’s important you start early with your ganache, as it will need to set for at least 2 hours.
01 – Place your chocolate in a heatproof bowl.
02 – Bring the coconut milk just to a boil; pour it over the chocolate.
03 – Let the mixture stand for 2 minutes, then stir until smooth and glossy.
04 – Finally, let your mixture cool for about 1 hour, stirring occasionally. Then move to the refrigerator for another hour to thicken.
01 – Preheat your oven to 360° F.
02 – Line your muffin pan with paper liners.
03 – Add the dry ingredients (except for chocolate chunks) to a large bowl: flour, cane sugar, cocoa powder, baking powder, baking soda & sea salt.
Stir with a whisk.
04 – Now add the wet ingredients: CBD, maple syrup, plant-based milk, applesauce, nut butter, apple cider vinegar & vanilla.
05 – Once you have a nice thick batter, stir in the chocolate chunks.
06 – Finally, scoop your batter into the muffin pan.
07 – Bake for about 25 minutes.
08 – When your muffins are ready, let them cool for at least 30 minutes to 1 hour. A good way to test if your muffins are ready is to stick a toothpick into them. If the toothpick comes out without batter on it, they are ready.
Note: You’ll be topping your cupcakes with ganache so you don’t want them to be too hot or the ganache will melt!
09 – After your cupcakes have cooled down enough, top them with your creamy chocolate ganache and any spooky toppings of your choice!
